Yield: 8-10 servings
Prep time: 30 minutes
Total time: 50 minutes
Ingredients:
1 large onion, chopped
2 c Greek yogurt
1/3 c red wine or broth
1 tbsp coconut aminos
1/2 tsp paprika
1/4 tsp garlic powder
1 tsp onion powder
1/2 tsp oregano
1/2 tsp thyme
1 tbsp mayo (I use Chosen Foods avocado mayo)
Chives, for garnish
1 tbsp earth balance (or butter)
Instructions:
- Garnish with chopped chives before serving. Enjoy with your favorite chips or veggies!
- In a large skillet, melt the Earth Balance over medium heat.
- Add the chopped onion and cook, stirring occasionally, for about 15-20 minutes, until the onions are golden brown and caramelized. Reduce heat if they begin to burn.
- Pour in the red wine or broth, scraping up any browned bits from the bottom of the pan. Let it simmer for a few minutes until the liquid reduces slightly.
- In a bowl, combine the Greek yogurt, coconut aminos, paprika, garlic powder, onion powder, oregano, thyme, and mayonnaise. Stir until well combined.
- Once the onions have cooled slightly, fold them into the yogurt mixture until evenly distributed.
- Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld.
