Indulge in the cozy flavors of fall with this Gluten-Free Apple Spice Galette! The flaky buttery crust filled with sweet, spiced apples is perfect for a cozy night in or a gathering with friends. Slice it up and enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream!

Yield: 6-8 servings

Prep time: 30 minutes

Total time: 2 hours

Ingredients:

Gluten-free galette dough:

1 1/2 c gluten-free flour (I used all purpose gluten-free flour from Trader Joe’s)

1/2 tsp baking powder

6 tbsp cold butter (I used earth balance)

5-6 tbsp cold water

1 tsp lemon (optional)

1 tsp honey or sugar (optional)

Pinch of salt

Filling

2 apples, thinly sliced

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cardamom

3 tbsp honey, maple syrup, or agave

1 tbsp lemon

Instructions:

Dough:

  1. In a bowl, combine the gluten-free flour, baking powder, and salt. Mix well.
  2. Add the cold butter in chunks, and cut it into the flour until the mixture resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, until the dough comes together. For a sweet galette, mix in honey and lemon juice.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Filling:

  1. Thinly slice the apples and toss them with lemon juice, your chosen sweetener, and spices.

Assembly:

  1. Let the dough sit at room temperature for 15 minutes. Roll it out into a large circle on a floured surface.
  2. Arrange the apple slices in the center of the dough, leaving a border.
  3. Fold the crust over the apples, pleating as you go.
  4. Bake in a preheated oven at 375°F for 35-40 minutes, or until the crust is golden and the apples are tender.
