Ingredients:
Gluten-free galette dough:
1 1/2 c gluten-free flour (I used all purpose gluten-free flour from Trader Joe’s)
1/2 tsp baking powder
6 tbsp cold butter (I used earth balance)
5-6 tbsp cold water
1 tsp lemon (optional)
1 tsp honey or sugar (optional)
Pinch of salt
Filling:
2 apples, thinly sliced
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom
3 tbsp honey, maple syrup, or agave
1 tbsp lemon
Instructions:
Dough:
- In a bowl, combine the gluten-free flour, baking powder, and salt. Mix well.
- Add the cold butter in chunks, and cut it into the flour until the mixture resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, until the dough comes together. For a sweet galette, mix in honey and lemon juice.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Filling:
- Thinly slice the apples and toss them with lemon juice, your chosen sweetener, and spices.
Assembly:
- Let the dough sit at room temperature for 15 minutes. Roll it out into a large circle on a floured surface.
- Arrange the apple slices in the center of the dough, leaving a border.
- Fold the crust over the apples, pleating as you go.
- Bake in a preheated oven at 375°F for 35-40 minutes, or until the crust is golden and the apples are tender.
