Spiced Pumpkin Oatmeal Cookies (GF + DF)

Spiced pumpkin oatmeal cookies with Purely Elizabeth oatmeal 

Pumpkin spice and everything nice! Whipping up a batch of spiced pumpkin oatmeal cookies with Purely Elizabeth oatmeal for the perfect healthy breakfast option or guilt-free dessert. These cookies are soft, chewy, and full of cozy autumn vibes.


Ingredients:

1 1/2 c oat flour 

1 pack Purely Elizabeth Cinnamon Oatmeal 

1 tbsp chia seeds 

1 scoop Further Food Pumpkin Collagen 

1 tsp baking soda 

1 tsp cinnamon 

1 tsp nutmeg 

1 tsp cardamom

1 tsp vanilla 

1/4 c maple syrup or agave 

1 egg 

1/2 c pumpkin puree 

1/2 c dried cranberries  

1/2 c chocolate chips 

1/4 c Purely Elizabeth Original Granola 

Pinch of salt 


Instructions:

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oat flour, Purely Elizabeth cinnamon oatmeal, chia seeds, pumpkin collagen, baking soda, cinnamon, nutmeg, cardamom, and a pinch of salt. Stir until everything is well combined.
  3. Then mix in the egg, pumpkin puree, maple syrup (or agave), and vanilla extract and mix well.
  4. Gently fold in the dried cranberries, chocolate chips, and Purely Elizabeth original granola.
  5. Using a spoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are golden brown and the cookies are set.
