Spiced pumpkin oatmeal cookies with Purely Elizabeth oatmeal
Pumpkin spice and everything nice! Whipping up a batch of spiced pumpkin oatmeal cookies with Purely Elizabeth oatmeal for the perfect healthy breakfast option or guilt-free dessert. These cookies are soft, chewy, and full of cozy autumn vibes.


Ingredients:
1 1/2 c oat flour
1 pack Purely Elizabeth Cinnamon Oatmeal
1 tbsp chia seeds
1 scoop Further Food Pumpkin Collagen
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 tsp cardamom
1 tsp vanilla
1/4 c maple syrup or agave
1 egg
1/2 c pumpkin puree
1/2 c dried cranberries
1/2 c chocolate chips
1/4 c Purely Elizabeth Original Granola
Pinch of salt
Instructions:
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, combine the oat flour, Purely Elizabeth cinnamon oatmeal, chia seeds, pumpkin collagen, baking soda, cinnamon, nutmeg, cardamom, and a pinch of salt. Stir until everything is well combined.
- Then mix in the egg, pumpkin puree, maple syrup (or agave), and vanilla extract and mix well.
- Gently fold in the dried cranberries, chocolate chips, and Purely Elizabeth original granola.
- Using a spoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown and the cookies are set.
