Ingredients:
- 1 bulb of fennel, thinly sliced
- 1/2 green apple, thinly sliced
- 3 celery stalks, finely chopped
- 1/2 shallot, finely chopped
- 1/2 cup dates, pitted and chopped
- 1 bunch fresh mint, chopped
- 1/4 cup pecans, chopped
- 1/4 cup pistachios, chopped
- 1 lemon, juiced
- 1 tsp honey
- 1 tsp apple cider vinegar
- 1 tbsp extra virgin olive oil (EVOO)
- Salt & pepper to taste
Instructions:
- Prepare Vegetables and Fruit: In a large mixing bowl, combine the sliced fennel, apple, celery, shallot, dates, mint, pecans, and pistachios.
- Make the Dressing: In a small bowl, whisk together the lemon juice, honey, apple cider vinegar, and EVOO. Season with a pinch of salt and pepper, adjusting to taste.
- Toss the Salad: Drizzle the dressing over the salad mixture and toss gently to combine, making sure everything is evenly coated.
