Yield: 12 servings
Prep time: 20 minutes
Total time: 40 minutes
Ingredients:
- 8-10 dates, halved and pitted
- 1/4 cup nut butter (like almond or cashew butter)
- 2 tbsp maple butter
- 1/4 cup melted chocolate (dark or semi-sweet)
- 1 tsp coconut oil
Instructions:
- Prepare Dates: Slice the dates in half lengthwise and remove the pits. Line a small baking sheet or plate with parchment paper, and arrange the halved dates in a single layer.
- Add Nut Butter: Using a spoon or small knife, spread a layer of nut butter over each date half.
- Drizzle Maple Butter: Drizzle maple butter over the nut-butter-filled dates for a sweet, rich flavor. Place the dates in the freezer for about 10 minutes to firm up.
- Melt Chocolate and Coconut Oil: In a small microwave-safe bowl, combine the chocolate and coconut oil. Microwave in 15-second intervals, stirring between each interval, until fully melted and smooth. Alternatively, melt the mixture on the stove over low heat.
- Coat Dates: Remove the dates from the freezer and drizzle melted chocolate mixture. Top with pumpkin seeds or desired toppings.
- Chill and Set: Return the dates to the freezer for another 15-20 minutes, or until the chocolate has hardened.
- Serve: Break the bark into pieces or keep the dates whole. Store any leftovers in an airtight container in the fridge or freezer for a quick, nutrient-packed snack.
