Tahini & Tzatziki Chicken Salad 


Lunch just got a major upgrade with this creamy Tahini Chicken Salad! Packed with lean protein, crunchy veggies, and tangy tahini, it’s the perfect balance of flavor and nutrition. Ingredients:

  • 1 1/2 cups shredded chicken (cooked)
  • 2-3 Persian cucumbers, chopped
  • 1/2 cup Greek yogurt
  • 1 tsp tahini 
  • 1 lemon, juiced
  • 1 small bunch fresh dill, chopped
  • 1 small bunch fresh mint, chopped
  • Salt & pepper to taste
  • Drizzle of extra virgin olive oil (EVOO)

Instructions:

  1. Prepare ingredients: In a large mixing bowl, combine the shredded chicken and chopped cucumbers. Chop mint and dill into fine pieces.
  2. Mix together: Add in the Greek yogurt, lemon juice, dill, mint, tahini, and a pinch of salt and pepper. Stir well until everything is smooth and combined.
  3. Season and Serve: Adjust salt and pepper to taste, and drizzle with a bit of extra virgin olive oil. Serve chilled on a bed of greens, in a wrap, or as is.
