Ingredients:
- 1 1/2 cups shredded chicken (cooked)
- 2-3 Persian cucumbers, chopped
- 1/2 cup Greek yogurt
- 1 tsp tahini
- 1 lemon, juiced
- 1 small bunch fresh dill, chopped
- 1 small bunch fresh mint, chopped
- Salt & pepper to taste
- Drizzle of extra virgin olive oil (EVOO)
Instructions:
- Prepare ingredients: In a large mixing bowl, combine the shredded chicken and chopped cucumbers. Chop mint and dill into fine pieces.
- Mix together: Add in the Greek yogurt, lemon juice, dill, mint, tahini, and a pinch of salt and pepper. Stir well until everything is smooth and combined.
- Season and Serve: Adjust salt and pepper to taste, and drizzle with a bit of extra virgin olive oil. Serve chilled on a bed of greens, in a wrap, or as is.
