Ingredients:
- 1 onion, sliced
- 1/2 cabbage, sliced into wedges
- 2 sausages (your choice – plant-based, chicken, or pork)
- 1 tbsp extra virgin olive oil (EVOO)
- 1 tsp thyme
- 1 tsp oregano
- Salt & pepper to taste
Tahini Lemon Dressing:
- 1 tbsp tahini (using the end of the jar works great!)
- 1 lemon, juiced
- 1 tsp apple cider vinegar
- 1/2 tsp thyme
- 1/2 tsp oregano
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare Vegetables and Sausage: Place the sliced onion and cabbage wedges on the baking sheet. Slice the sausages into rounds and add them to the sheet.
- Season and Drizzle: Drizzle the olive oil over the vegetables and sausage. Sprinkle with thyme, oregano, salt, and pepper, tossing gently to coat everything evenly.
- Roast: Place the baking sheet in the oven and roast for 25-30 minutes, flipping halfway through, until the cabbage is caramelized and the sausage is golden.
- Make the Dressing: In a small bowl, combine the tahini, lemon juice, apple cider vinegar, thyme, and oregano. Stir well until smooth and creamy. Add a splash of water if needed for a pourable consistency.
- Serve: Once the cabbage and sausage are roasted, remove from the oven. Drizzle the tahini lemon dressing over the top and serve warm.
