Yield: 2-3 servings

Prep time: 15 minutes

Total time: 35 minutes

Ingredients

  • 1 large onion, thinly sliced
  • 1 tbsp Earth Balance or butter
  • 1 tsp balsamic vinegar
  • 1 tsp coconut aminos
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Splash of red wine or vegetable broth
  • Salt and pepper, to taste
  • 3 cups gluten-free pasta of your choice
  • Feta cheese, for topping (optional)
  • Fresh mint, for garnish

Instructions

  1. Caramelize the Onions: In a large skillet, melt the Earth Balance or butter over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring frequently, for about 15–20 minutes, or until the onions are soft and caramelized, turning a deep golden brown.
  2. Add Flavor: Once the onions are caramelized, add the balsamic vinegar, coconut aminos, thyme, oregano, and a splash of red wine or broth. Stir to combine and let it cook for another 2–3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  3. Combine with Pasta: Add the cooked pasta to the skillet and toss to coat the pasta in the caramelized onion mixture. If the pasta seems dry, add a little more broth or a splash of olive oil.
  4. Serve: Plate the pasta and top it with crumbled feta cheese and fresh mint leaves for a burst of flavor.
  5. Enjoy: Serve warm as a delightful side dish for Friendsgiving or your holiday gathering, and enjoy the comforting flavors of fall!
