For this recipe, I filled them with a vibrant Mediterranean salad made with fresh herbs, juicy tomatoes, olives, and a zesty lemon dressing. Ingredients:
- 1 pack Trader Joe’s frozen artichoke bottoms
- 1 bunch dill, chopped
- 1 bunch parsley, chopped
- 1/2 cup Kalamata olives, chopped
- 1/3 cup feta, crumbled
- 2 tablespoons extra virgin olive oil (EVOO)
- Salt & pepper, to taste
Instructions:
- Prepare the Artichoke Bottoms
- Cook the frozen artichoke bottoms according to the package instructions. You can either roast, steam, or simmer them until tender. If roasting, preheat the oven to 400°F, drizzle with olive oil, and bake for about 15-20 minutes until softened.
- Make the Mediterranean Salad
- In a bowl, combine the chopped dill, parsley, Kalamata olives, and crumbled feta. Drizzle with olive oil, season with salt and pepper, and toss to combine.
- Assemble the Dish
