Ingredients:

  • ½  cup cocoa powder
  • 1 tbsp Karo® Corn Syrup
  • 1 cup brown sugar
  • 1 tbsp vanilla extract
  • 2 tbsp Earth Balance (or any dairy-free butter substitute)
  • 2 tbsp water
  • Pinch of salt
  • ¼ cup dried cranberries (optional)
  • ¼ cup chopped pistachios (optional)

Instructions

  1. Prepare the pan:
    Line a small baking dish (8×8 or similar) with parchment paper, leaving an overhang for easy removal. Set aside.
  2. Melt the base:
    In a medium saucepan over medium heat, combine the cocoa powder, Karo® Syrup, brown sugar, Earth Balance, water, and salt. Stir continuously until the mixture is smooth and begins to bubble gently.
  3. Incorporate the vanilla:
    Remove the saucepan from heat and stir in the vanilla extract. The mixture should have a glossy, thick consistency.
  4. Add the mix-ins:
    Fold in the dried cranberries and chopped pistachios, reserving a few for garnish.
  5. Set the fudge:
    Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the reserved cranberries and pistachios on top for decoration.
  6. Chill:
    Place the dish in the refrigerator for at least 2 hours or until the fudge is firm.
  7. Form and serve:
    Once set, lift the fudge out of the pan using the parchment overhang. Form into bars or desired shape and serve.
